Flourless spiced oatmeal cookies in just 20 minutes. Naturally gluten-free, made with oats, nut butter, walnuts + chia—full of healthy fats + fiber to keep your sweet tooth happy without the crash.

Makes 12 cookies


Ingredients

  • 1/2 c nut butter

  • 1/4 c maple syrup

  • 1/4 tsp baking soda

  • 1/8 tsp sea salt

  • 3/4 c rolled oats (gluten free)

  • 1 Tbsp chia seeds

  • 1/2 c walnuts, coarsely chopped

  • 1 tsp pumpkin pie spice (or, 3/4 tsp cinnamon w/ 1 generous pinch of nutmeg, cloves, and ground ginger)



Directions

  1. Preheat oven to 350° F. Line a baking sheet with parchment paper.

  2. Mix nut butter, maple syrup, baking soda, and salt until well combined.

  3. Add oats, chia seeds, walnuts, and spices and stir well.

  4. Scoop heaping tablespoon dough balls onto baking sheet and gently flatten cookies.

  5. Bake for 10-11 min, then let cool before enjoying.
