Cauliflower Protein Porridge
There is a time and place for oatmeal, and I’m a big fan. However, mixing in this recipe every once in a while will add a more nutrient-rich start to your day. Cauliflower provides vitamin C (immunity, enzyme activation, collagen formation, enhancement of iron absorption) and folate (DNA synthesis, amino acid metabolism, cell maturation). Adding protein is necessary as our bodies make enzymes, hormones, and antibodies; additionally, it prevents atrophy (which can result from a protein deficit). Nuts, especially almond butter in this case, provide calcium, magnesium, vitamin E (antioxidant), and omega-3 fatty acids which are essential to our diet (our body doesn’t make these on its own). Though some may initially shy from nuts as they are calorically-dense, they can provide healthy, unsaturated fat which is helpful, not harmful (in moderation, of course).
Makes: 1 serving
Porridge:
Heaping cup riced cauliflower
1/2 c water or nut milk
1 T flax seed meal
1 scoop protein powder of choice (I prefer plant protein)
1/4 t cinnamon
Toppings (optional):
Berry compote
Nut butter (I prefer @baseculture )
Fresh fruit
Nuts
Directions:
Bring cauliflower rice and water/milk to a boil.
Add flax meal.
Simmer for a couple more minutes.
Remove from heat and add remaining ingredients!
