Zucchini Banana Muffins

Indulge with these delicious and nutritious muffins! Made with wholesome ingredients like almond/oat flour, zucchini, and banana, these muffins are a great source of fiber, healthy fats, and vitamins. Plus, without any refined sugar, they offer a healthier alternative to traditional muffins and can help to support stable blood sugar levels and overall well-being.


  • 1 c almond flour

  • 1/2 c oat flour

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 3/4 c banana, mashed

  • 1 egg

  • 1 c zucchini, shredded

  • 1/4 c almond milk

  • 3 Tbsp honey

  • 1 tsp vanilla

  • (Optional) 1/2 c walnuts, roasted

  • (Optional) 1/4 c dark chocolate chips, unsweetened


  1. Mix together dry ingredients and set aside.

  2. Combine wet ingredients, then slowly fold in dry mixture.

  3. Add in optional mix ins and distribute in cupcake tins.

  4. Bake at 350 deg F for 25-30 minutes.

  5. Let cool in pan before removing.
