Homemade Sweet Potato Chips

Simple. Inexpensive. Healthy.

These chips are a great snack. Loaded with beta-carotene, vitamin A, and vitamin C, sweet potatoes offer many health benefits. Also, unlike white potatoes that act more as simple carbohydrates, sweet potatoes are higher in fiber and full of complex carbohydrates. Complex carbs take longer for the body to break down and use and therefore help to regulate blood sugar and are more nutritious. So here’s how to make them into the delicious chip form:

  1. Preheat oven to 375 deg F.

  2. Wash and slice sweet potatoes carefully with a mandolin.

  3. Place in a bowl and generously coat with coconut oil and sea salt.

  4. Spread evenly on a baking sheet.

  5. Bake for 10-12 minutes on each side, flipping the chips half way through.

  6. Remove from oven. Let cool. Enjoy plain or with your favorite dip!
