Need something to curb your chocolate craving? These muffies are a cross between a cookie and a muffin. In essence, they are cake cookies.
1/4 c almond milk
1/3 c maple syrup
3 T coconut oil
1/2 t baking soda
1 t apple cider vinegar
Preheat oven to 350 deg F.
Mix together dry ingredients, then set aside.
Mix “additional mixture” and then combine with remaining wet ingredients.
Pour wet mixture into dry ingredients and mix until well-combined.
Put muffie mixture in the freezer for about 10 minutes or until it seems to be thick enough to work with.
Spoon a tablespoon amount of dough onto parchment-lined cookie sheet. Repeat until there is no mixture remaining.
