Cauliflower Pizza Crust

Craving pizza? This crust recipe made from cauliflower is a great substitute that is both low-carb and delicious. Important: wring out most of the moisture from the cooked cauliflower! Also, add more flavor by including your favorite herbs or spices.

Ingredients:

  • 1 medium sized head of cauliflower

  • pinch of salt

  • 1 tsp. dried oregano

  • 1/2 tsp. garlic powder

  • 2 Tbsp almond meal or gluten-free flour

  • 1 Tbsp olive oil

  • 1 egg

  • 3 Tbsp finely grated parmesan cheese (optional)

Directions:

  1. Preheat oven to 450F.

  2. Break cauliflower into bits and steam until tender. Once cooked, set aside to chill. Next, put cauliflower in food processor and pulse until it becomes a rice-like mixture. Pour the cauliflower out onto a clean kitchen towel and (once it’s cooled off a little), wring out as much moisture as possible. (This will make or break the crust. So don’t skip this step!)

  3. In a bowl, combine the cauliflower, salt, oregano, garlic powder, almond meal, parmesan (if using) and olive oil. Make a little well in the cauliflower, crack in the egg, and then incorporate it into the other ingredients.

  4. Form the dough into a ball and place it on a greased, parchment-lined baking sheet. Spread the dough out into a round, crust-shape (roughly 1/4inch) and bake it in the preheated oven for about 11 to 14 minutes.

  5. Remove it from the oven, top the pizza with whatever toppings you’d like, and then bake it again for 4-5 minutes (or to your liking). Let sit for a minute, and enjoy!
